Celtica Winery and Vineyard:
A Love for the Silesian Land
The Celtica Winery and Vineyard was established in 2015 in Sobótka—the homeland of the Celts, who brought the art of winemaking to the area around Mount Ślęża as early as the 5th century B.C.
Our vineyard was planted on the eastern slopes of Mount Ślęża, with a southeastern exposure. We gained our experience since 2010 by experimenting with purchased grapes and with what kind people brought us.
Our inspiration was undoubtedly the annual tastings of foreign wines and contact with Californian winemaker Mike Whitney (also from the area around Sobótka).
We have over 6,500 grapevines on 1.5 hectares, including 8 leading grape varieties: Merlot, Regent, Pinot Noir, Gewürztraminer, Solaris, Riesling, Sauvignon Blanc, and Johanniter. The soil, of classes III and IV, is moderate and diverse, with a specific microclimate of loess soils. We believe that the area around Wrocław is among the best locations for viticulture in Poland, which is why we also chose demanding and challenging varieties like Merlot.
The winery is not a commercial project but the fulfillment of a dream of farming and an expression of our fascination with wine and viticulture. We also have 2,000 blackcurrant bushes, and the wine made from them is an absolute hit with our customers. We are the only producers in Lower Silesia of a branded blackcurrant wine, a fruit that we believe is dramatically underrated!
Many substances valuable to humans are preserved during the winemaking process: vitamin C, magnesium, potassium, fiber, polyphenols, and anthocyanins (antioxidants). Blackcurrant wine is probably healthier than grape wine! The wine SABAT owes its name to the first historical name of Sobótka and is a unique combination of ancient tradition and modern knowledge. We use simple, artisanal production methods, which makes it a product of our love for the Silesian land. Since 2018, we have been members of the Lower Silesian Wineries Association, helping to create the Lower Silesian Beer and Wine Route.
We fell in love with this place almost at first sight, not just because it’s located almost exactly halfway between WaÅ‚brzych and WrocÅ‚aw, where our families come from. We believe it was no coincidence.
White Wines

Riesling – White, Dry
Riesling is the most classic grape variety. It is most often found in cool countries like Germany, Austria, the Czech Republic, or Poland. It is typically characterized by relatively high acidity, which makes the wine particularly fresh and light. Young Rieslings have fruit aromas of lime, lemon, apple, and pear. Older ones, however, develop petrol-like notes. This is the driest wine from our winery.

Sauvignon Blanc – White, Dry
Along with Riesling, Sauvignon Blanc is one of the most important and popular white grape varieties worldwide. Thanks to its fresh, lively aroma, it enjoys an unbroken popularity. Depending on the vintage, our wines can have delicate aromas of exotic fruits like peach and gooseberry or—in cooler years—distinct citrusy, acidic notes. It’s difficult to cultivate in Poland, but it is highly valued.

Johanniter – White, Semi-Dry
Johanniter is a hybrid (cross) grape variety based on the old, well-proven Riesling variety. It is milder in taste but more aromatic, with fruity notes of apple, pear, melon, banana, and pineapple. This is a very popular grape variety grown in Poland. It is ideal as an everyday wine and with meals.

Gewürztraminer – White, Semi-Dry
Gewürztraminer is the king of our white wines. It’s a wonderful and noble variety from Alsace with aromas of white flowers and honey, especially elderflower, lychee, and wild rose petals. Low acidity and residual sugar emphasize the rich aromas and make the wine exceptionally mild and pleasant—as its name suggests, since „gewürzt” means „spicy.” It makes an ideal gift for special occasions. You either love it or hate it.

3 Pinot – White, Semi-Dry
As the name suggests, our 3 Pinot was made from three different Pinot varieties that grow in our vineyard: Pinot Noir, Pinot Gris, and Pinot Blanc. A white wine with a pink shimmer, it was briefly cold-macerated on the skins, with very intense aromas of red fruits like currants and strawberries. It is light and fresh, sometimes with a hint of licorice. When lightly aerated, it develops an exceptional taste. Depending on the vintage, it can be a white or rosé wine.

Solaris – White, Semi-Sweet
Solaris, the „Sunny” one, is an absolutely exceptional grape variety, although it is the most widespread in Poland. Yet, the wine from it is unique at every winery. In 2018, we were able to harvest Solaris as early as August 24. It ripens very quickly, and the grapes are especially sweet. A wine with low acidity, pleasant fresh aromas of pineapple and hazelnut, a rather high alcohol content, and more mature, wheat-like notes.

Muscat Ottonel – White, Semi-Sweet
Muscats belong to the oldest European grape varieties. They are also often found as table grapes, as they provide a particularly characteristic, intense aroma and a wonderful taste. Wines from this variety are strongly reminiscent of aromatic, sometimes even very sweet wines from Greece, with notes of nutmeg.

Fiona – White, Semi-Sweet to Sweet
Fiona, „white” in Celtic, is like the color of the wine, like the aromas of white flowers, like innocence and purity, like snow. Fiona is always the first wine of the year. We never know in advance which grape variety will define it—it is ready every December, just in time for Christmas, and is made specifically for this occasion. Its exceptionally intense aroma of elderflower comes from an infusion that we make from our blooming bushes in the spring. It only yields a few dozen bottles, which disappear as quickly as snow.

Regent – Red, Dry
A very interesting wine with an incredibly intense color, in the style of robust Spanish wines. In taste and aroma, you can find a slight fruitiness—cherries, currants—and a note that is difficult to describe, almost like cigar or cedarwood. Regent has low acidity, which means the wine tastes very mild even though it’s almost completely free of residual sugar. American oak barrels also give it a tannic roughness and interesting, delicate vanilla notes.

Złoty Merlin – Red, Dry
A blend of red grape varieties from our vineyard that complement each other perfectly. The grapes were macerated for a very long time—up to 6 weeks—in the Georgian style, and aged in French oak barrels. Each variety brings something special to this wine: color, expression, gentleness, and aromas. A dry wine connoisseur will immediately appreciate it. They will also recognize the clear fruity notes with powerful dried plum, raspberry, and the tannic structure of the oak.

Merlot – Red, Semi-Dry
A delicate wine with well-balanced acidity. Initially, we had great doubts about whether we would succeed in our climate. But it enchants with its gentleness, intense color, and notes of red fruits—raspberries, cherries—as well as subtle aromas of dried plum and chocolate. Aged in French oak barrels, it acquires a characteristic but not overpowering note. We are very proud of this wine, especially since there are only a few winemakers in Poland who grow this variety—although it is one of the four most popular red varieties worldwide.

Rubea Gofert – Red, Sweet
Probably the only wine in Poland that has been macerated for four weeks and aged for six months in French oak barrels. A true explosion of taste and aroma—described by many customers as „the taste of their childhood.” Ruby red with purple reflections, a clear aroma of currants, a slight note of cherries, and dried plum. Awarded in the „Our Culinary Heritage – Tastes of the Regions” competition. A truly exceptional wine that even earned a unique label made from real cherry wood—the only one of its kind in Poland.

Luna – Sweet (from overripe grapes)
Luna is a very special wine. The grapes for its production dried on the vine for several weeks after the harvest. This concentrated the sugar and acidity in the berries, and the aromas took on exceptional nuances. Noble rot (Botrytis) also developed, and an 18-month aging period in heavily toasted barrels—the result is a wine that can compete with the best in Europe. Luna received the gold medal at the Carpatia Vini 2020 international wine competition as the only Polish wine in the special wines category.
